Sweet Potatoes


Hearty Sweet Potato Stew

~A winter favorite of Kamelia's, Waltham Fields' Bookkeeper and Office Coordinator

  • 1 large onion, chopped (or you can substitute or add in leeks)
  • 1 celery stalk, chopped
  • 2-3 large garlic cloves, minced
  • 1/8 tsp cayenne pepper
  • 4 sweet potatoes, peeled and cut into 1"-2" cubes
  • 32 oz vegetable broth
  • 28 oz can diced tomatoes
  • 1 bunch kale or chard or spinach or... it looks like a lot, but it'll cook down
  • 1/2 can unsweetened coconut milk
  • Salt and pepper to taste
  • Optional: add cauliflower, and more vegetable broth or water and more coconut milk (to taste).
How to:
  • 1. In your stockpot, saute onion and/or leeks, garlic, celery in olive and/or extra virgin coconut oil.
  • 2. Add broth, sweet potatoes, tomatoes, and cayenne.
  • 3. Cover and bring to a boil, then simmer covered until potatoes are tender, about 15-20 minutes.
  • 4. Add coconut milk, salt to taste and kale (or other greens) until just wilted. If it's too thick add some hot water to get the consistency you desire.
