Join WFCF Director of Education and Community Programs, Jessica Herwick, to learn various methods (both traditional and contemporary) to turn citrus rinds into soft and hard candy.  

Candying fruits and foods is a centuries-old method of preserving that uses sugar instead of salt or brine. Candied rinds are most often used in baking or eaten as a sweet treat on their own, but have many other culinary uses and provide a bright burst of citrus and sweetness during the winter months when seasonal fruits are limited (and they make wonderful gifts).

Jessica will share the many methods available for candying and guide participants through a simple, basic method to candy the rinds of lemon peels. Participants will engage in a hands - on demonstration of the full candying process from selection of fruits & sanitizing to finishing & storage. All individual registrants will go home with a jar of rinds in a sugar bath along with guidance and some necessary materials for completing the candying process at home.

TOOLS AT HOME: Participants will need access to a stove top or slow cooker (crock pot), and cookie sheet at home for candied rind completion. Parchment and additional materials will be provided. * candy thermometer is not required but recommended for beginners. Recommendations made for reliable tools during the workshop session. 

* Folks interested in attending as a team are welcome to register using the Friends/Family Team Ticket.  Teams work from one station, share one set of tools, and work together to create one jar of candied lemon rinds. Most often used by families in the same household.

* This workshop is geared towards adult learners but youth 12yrs. and older are welcome to attend with an adult.  Adults registering with a young learner 12 - 17yrs., please choose Friends/Family Ticket and plan to work as a team.
